A prospective analysis of two Harvard cohort studies — the Nurses' Health Study and the Health Professionals Follow-up Study — pooled over one hundred and twenty thousand adults and followed them for up to twenty-six years. Each additional daily serving of unprocessed red meat was associated with a thirteen percent higher all-cause mortality risk. Each additional daily serving of processed red meat — bacon, hot dogs, sausage, salted or cured meats — was associated with a twenty percent higher all-cause mortality risk. Substituting one serving of red meat per day with fish, poultry, nuts, legumes, or whole grains reduced mortality risk by seven to nineteen percent depending on the substitution. The study's size, duration, and the substitution analysis make it one of the most influential papers in nutritional epidemiology — and one of the most debated. Few dietary questions generate more heat and less clarity in public discourse than red meat and health. The debate runs from legitimate scientific uncertainty about causal mechanisms to motivated reasoning from both plant-based advocates and low-carbohydrate diet proponents. A prospective analysis published in the Archives of Internal Medicine in 2012 attempted to bring observational precision to the question, pooling twenty-six years of follow-up from the Nurses' Health Study — eighty-three thousand six hundred and forty-four women — and the Health Professionals Follow-up Study — thirty-seven --- Paper cited: Red meat consumption and mortality: results from 2 prospective cohort studies Authors: Pan A, Sun Q, Bernstein AM, Schulze MB, Manson JE, Stampfer MJ, Willett WC, Hu FB Journal: Archives of Internal Medicine Year: 2012 DOI: 10.1001/archinternmed.2011.2287 --- Subscribe for one peer-reviewed paper made practical, every Tuesday and Friday.
