Acrylamide forms whenever starchy food is cooked hot and dry enough to turn golden brown — in fries, toast, coffee, and baked goods. A landmark genomic study found its specific DNA-damage fingerprint in roughly a third of nearly 1,600 human tumors across 19 cancer types. But when researchers directly track dietary acrylamide intake against actual cancer rates in large populations, the results are far more mixed than that finding suggests — except for one specific, more consistent signal. This episode explains the real chemistry, the real mechanism, and what current human research honestly does and doesn't show. 00:00 – A molecular fingerprint found in human tumors 2:00 – Why browning food creates a chemical you didn't ask for 4:00 – What this molecule actually does inside your cells 6:00 – The part that makes this genuinely complicated 7:30 – The retention moment: mechanism real, scale unresolved 8:15 – Closing: precise, low-cost adjustments Educational content only — not medical advice. #Acrylamide #MaillardReaction #DNADamage #CancerRisk #FoodScience #NutritionScience #Carcinogens #cookingscience SOURCES USED Zhivagui, M. et al.
