Ultra-processed food now makes up the majority of calories eaten in countries like the UK and the US, and it’s one of the biggest reasons rates of obesity, type 2 diabetes, fatty liver disease and cardiovascular disease have exploded over the last few decades.
These foods are engineered to be super easy to eat, cheap, long-lasting and difficult to STOP eating, but they also fundamentally change the way the body handles energy, hunger, blood sugar and inflammation. And the frightening thing is that a lot of people still think this conversation is just about calories or weight gain, when in reality it goes much deeper than that.
In this video, I wanted to properly break down the science in a way that actually makes sense. We go through what ultra-processed food really is, how modified starches and refined carbohydrates affect blood glucose and insulin, what happens to the gut microbiome when fibre disappears from the diet, how chronic low-grade inflammation develops inside blood vessels, and why visceral fat is such an important link between modern diets and diseases like heart attacks, strokes and dementia. A lot of the damage builds silently for years before symptoms appear, which is exactly why this matters so much.
We cover:
-Why ultra-processed food is linked to heart disease
-The hidden effects on inflammation and gut health
-Modified starches, emulsifiers, nitrites and refined oils
-Visceral fat, insulin resistance and blood sugar spikes
-Why fibre and whole foods matter so much
-The real reason Mediterranean diets work
-What I’ve seen first-hand in emergency medicine
